I do not think you will ruin anything about your GlassFish domain by changing your LANG environment variable back to its original setting. More specifically, if you have not used any non-ASCII characters in your domain, there is no difference in how 8859-1 characters and UTF-8 characters are encoded for page servicing, url decoding, param encoding, etc.
