Just in case anyone is searching the internet with the same problem - I now fixed this.

Problem was that I installed Java JAI from here:

https://jai.dev.java.net/binary-builds.html

but glassfish (or my application) didn't pick this up until I did an "undeploy", stop the server, start the server and then a fresh deploy.

Just bouncing the server is apparently not enough.
