Is there anything in the server log files when it hangs?
Can you attach a JConsole (make sure you start GF with the
-Dcom.sun.management.jmxremote JVM option) to it and find out which
thread is using the 25%? (I assume you are on a quad-core machine?), and
how much of your heap you are using?

Exactly every 7 minutes the server hangs with a 25%, no message in the error log, nothing. It just cease to attend clients and I must stop the domain and restart the domain.
