custom sql, after load ammendment methods, descriptor query manager

Is it possible to use toplink's features for defining custom sql for
insert, read, readall, update, and delete operations, specify after load
amendment methods, or use descriptor query manager to change toplink
behavior for EJB3 CMP entity beans? Specifically, I need to demonstrate
to our db team the ability to use stored procedures for the basic
insert/update operations but still maintain the EJB3 CMP programming
model for our developers. Can this be done through descriptors in
orm.xml and/or persistence.xml that augment the developer specified
annotations in the entity classes?

Any help and examples would be greatly appreciated.

Thanks,
