I believe there are two tables that should be dropped:

cmp3_employee
cmp3_project

The following sql statements can be run in a script on Oracle. I am
not sure what the equivalent Derby functionality is to "cascade
constraints".

drop table cmp3_employee cascade constraints
drop table cmp3_project cascade constraints
