I think you are making a misassumption.
I'll try to explain:
The nio key selection process (translated to your code the socket accept method) is just single threaded and only blocks if
there is no activity and no timeout wake ups.
The Threadpool (default pipeline) is just used to make the server more responsive when
actually reading bytes or doing some parsing.
In your usecase you might only need 1-5 Threads so serve 1000 clients smoothly.
So you do get a good Thread deal with grizzly
I can't give you an answer on the jdk question.
