The difference between "Open Source Edition" and "Oracle GlassFish Server" is briefly described on the project homepage (

The latest stable bits are the ones you have. For every stable build, the update center (if enabled) will prompt you when updates become available.
Of course, there's also the work in progress for 3.1 with the recent Milestone 7 release:
