In the absence of any suggestions, I did the following ...
On the client machine (where Netbeans is used to build/deploy the app;
and the GUI is run): removed all but the current JRE/JDK/Glassfish-v3.
On the server machine: changed nothing.
Rebuilt and redeployed the application. The "unsigned application ..."
exception is no longer thrown.
I suspect that somewhere there was a mismatch in the version of binaries
being used resulting in signed jars not being recognised as such.
