You can always remove the slf4j-jdk14 impl binding jar from the Hibernate install, and replace it with the jar slf4j's log4j binding and the log4j jar.
If you've installed Hibernate via the update tool then slf4j-jdk14-1.5.8.jar will be in glassfishv3/glassfish/lib.
Personally I prefer to deploy Hibernate to my domain's lib folder with my chosen logging bindings, partly for that reason.
