These are "umbrella" packages which have dependencies on other packages.
When you install them, all the packages required by a given profile (say web-profile) are installed.
Similarly, the "glassfish-full-profile" will install support for the entire Java EE 6 platform.
You can install a "web profile" bundle and upgrade to the full profile by installing a *-full-profile package.
