I wrote a custom Handler to solve this and configured it using the console (Application Server > Logging > Log Handler or modify domain.xml directly). However, the approach desribed above with the configuration seems better. I had also trouble to pass JVM parameters to GF, but if you use the console (JVM Settings > JVM Options) it works.
