Not that I've done it (yet... going to setup under Ubuntu soon :)) but in the
absence of some kind of installer doing it for you, I'd create an
unprivileged user 'glassfish', * out the password, and chown/chmod
everything under the GF install directory for this user only. Then use 'su'
in the startup script.
