After investigation (looking in code and talking to Sun) we think this is a bug and reported it here:
In that bug report you will find an attachment showing how we adjusted the code to get it to work: in there we added a parameter -DjmxConnectorHost and when setting this properly in domain.xml it is now possible to start the domain and have it bound to the specific IP address we indicated.
