To create a cluster, read the following blog or watch the screencast:
http://blogs.sun.com/anilam/entry/glassfish_v2_admin_console_series
http://blogs.sun.com/nazrul/entry/under_the_hood_of_glassfish
To set up loadbalancing:
F5:

LB Plugin:

I don't know of any reason why you may need to remove the default doamin. But, creating a new domain is fairly easy. You may use %asadmin <a href="
http://docs.sun.com/app/docs/doc/819-4736/6n6s9pj1r?a=view
">create-domain</a> command. Refer to
https://glassfish.dev.java.net/javaee5/docs/DocsIndex.html
for more details.
