Often some experimenting is required to modify styles. I am not sure if I can theoretically conclude which change would work, and which would not.

The best way to find which styles to change and how is to use interactive style inspector in Firebug. You can inspect a particular element ( i.e. textField's select), see which styles are applied to it and change them at runtime.

elements do not inherit cascading background colors.
In order to change background color for the textbox, you can modify it
in the CSS 
webui-jsf-suntheme.jar /... colorAndMedia.css

look for elements starting with:
