persistence=false means do not save data into a persistent store and track
missed deliveries while server was down. It looks like an OS or a JVM glitch
when the calculation between the current time on that Sun and the Monday
midnight showed as either passed or now... That said we had reports of
Sundays behaving strangely (but that was a Sunday-based schedule). So if you
can reproduce it next time, please file a bug.
