This is according to the documentation of the "format" attribute of the
<access-log> element in the "Domain File Format Reference":

    Specifies the format of the access log. For a complete list of token
values you can use in the format,
    see the online help for the Access Log tab of the HTTP Service page
in the Administration Console.
