No, a redeploy would redeploy the new version of the application to all targets of the domain.
What you may do is to remove the application reference of the old version from the target you want to upgrade, then deploy the newer version of the application with a different name to this target.
We plan to support application versioning in v3 where different versions of the application can co-exist at different targets. It will be much easier then.
