We have started a page on adoption of GlassFish Technologies at the
GlassFish Wiki:

We are interested in any uses, be them of GlassFish, TopLink Essentials,
or one of the separate artifacts (JAXB, Grizzly, etc).

We have separate categories for external sites, internal sites, tools,
groups, etc...

Feel free to add directly but please give us a contact name for those
cases (like intra-company deployments) that we can't verify. Or send
email to this thread.
